- One-quarter pound (200 mg) peeled & deveined shrimp, any size.
- One-quarter pound (200 mg) pea shoots.
- One-half cup ((200 ml) brown or white rice as desired.
- Other microgreens to taste, optional.
- Olive oil 2 tbsp.
- Salt and pepper to taste.
Procedure:
- Prepare rice as desired. Fluffy style recommended; sticky optional.
- Sauté shrimp two minutes over pre-warmed medium heat.
- Add greens and sauté additional one minute.
- Serve sautéed ingredients over rice.
Accompaniments:
- Chopped romaine salad with nuts and pears.
- Dry chardonnay or berry/pomegranate juice.
